Recipes for the keeping....Prime Rib Stew

Prime Rib Stew

I wish the photographer in me would have taken some pictures of these dishes, but I didn't. Well moving forward, I work on it.

My father and law made an amazing prime rib for Christmas this year. We had a ton of it left over. I couldn't see it all go to waste. I decided to make a stew with the leftovers.You will be able to tell over time which recipes are mine and which are taken from others. Mine tend to go by taste verses measurements.

Ingredients: 

Potatoes
Carrots
Onions
Garlic
Olive Oil
Beef Base
Celery
Prime Rib bone (optional)
Prime Rib 
Salt and Pepper

Directions:

Saute Onions, Garlic in olive oil. Add bone to add the flavor. Once the onions are soft add carrots and celery. Saute a little bit longer for until soft. Turn down the heat, add potatoes and cut up pieces of prime rib. Add 8 cups of water, 2 TB of beef base, and dash of salt and pepper.  Let simmer on low for a couple of hours.

We ended up transferring to the crockpot so we could transport it to Josh's sister house to share with the family. So this could be a dish to make ahead of time and put into the crockpot for the next day, while at work or out running errands.
